My understanding is that this relates to the accuracy of the reading in relation to the position of the sensor. Many sensors are placed near habitation doors and if they are constantly opened/closed they may not reflect accurately the temperature inside the bulk of the motorhome. Similarly, there may be slight variations in the manufacture of the sensors, and the Offset is a means of self-calibration.

 

We have a standalone simple analogue temperature gauge on the wall away from the door and at the centre of the van, and have confidence it is showing a correct temperature. We then use the Offset to show the same temperature on the heating system gauge. In effect, this calibrates the system gauge to reflect the accurate temperature in the centre of the motorhome.

 

It works for us!
