The main question is whether the van lining and associated equipment might be difficult (expensive) to strip out or whether it may be feasible to retain it and work around. I’ve no idea what is involved in a refrigerator van, presumably it has a specialist lining/insulation material and electrics. Looking at a van (VW Crafter) online with limited information.
