Pickering is not a place I can get excited about but if you want to spend a full day out go to Pickering and get the steam train to Whitby with a hop off for an hour or so at Goathland. Harrogate is a nice town to live in but I am not sure there is a lot to see or do for a visit, maybe combining it with a visit to Knaresborough would be good. Skipton is quite a drive away.
